You can hardly go wrong with these wonderful marrow dumplings. They always turn out well, taste great and last a long time.
Ingredients:
50 gr breadcrumbs
40 grams of beef marrow
0.5 soaked bun
2 tbsp parsley (chopped small)
1 egg
1 pinch of salt and pepper
Nutmeg (to taste)
Preparation:
1. Remove the marrow from the bones and crush them
2. Leave the pulp in a pan over a mild heat and then let it cool
3. Stir the pulp until foamy
4. Stir the breadcrumbs, the bun, the parsley and the egg well
4. Season generously with salt, pepper and nutmeg
5. Form small dumplings out of the dough and add them to the boiling broth
6. Dumplings are good when they float on the surface
