Summer is coming to an end. This is just the right time of year to prepare a cold Russian soup “Okroshka”. The name “okroshka” comes from the word “kroschit'”, which means “to crumble” or “to cut finely”. So you can add pretty much all sorts of finely chopped meat and vegetables.
You need:
700 g chicken breast fillet
6-7 cucumbers
6 large radishes
4 chicken eggs
4-5 potatoes
1 bunch of spring onions
1 bunch of dill
1 bunch of parsley
Peppermint (to taste)
1/2 bunch of spinal
1 liter drinking kefir
4 tablespoons sour cream
1-2 teaspoons hot mustard
0.015 teaspoon black pepper
1 teaspoon salt
Preparation:
1. Cook potatoes, chicken eggs and chicken breast fillet separately in advance and then chop finely and mix
2. Wash the vegetables and herbs well, then chop them finely and add them. Mix well, salt and pepper to taste
3. Add drinking kefir and sour cream to the resulting mixture. Add salt, pepper and mustard to taste
Chef's tip:
If the okroshka isn't spicy enough, season it with a few drops of lemon juice and you'll immediately feel the change in taste.
Bon appetit!
